As you know, I’m not a vegetarian. Traditional Italian cuisine from the South, though, kinda is because historically this was a poor region where most of the protein came from dairy and grains (and fish for the ones on the coastline).
I decided to make this delicious risotto in a way kinda different from the usual but I can assure you it was delicious.
Ingredients:
– 70g of rice (I soaked it overnight in water and apple vinegar, here I explain why: https://www.youtube.com/watch?v=8xzmSDSZswc)
– 250g cherry tomatoes
– 1 buffalo mozzarella
– 1 clove of garlic
– 2 tbsp white wine
– 2 tbsp olive oil
– 20g parmesan cheese or grana padano
– bouillon
– basil
– black pepper
