Happy easter folks, this one has to be one of my best tasingt, most nutritious and protein packed meal. My take on the Nigerian jollof dish using chickpeas with plantain and avocado.

Recipe
oil free chickpea jollof!
1. Heat 3 tablespoons of water in the pan/pot
2. Chop the spring onions and garlic and chilli and add to the pan
3. Chop up the mushrooms and add to the pan
4. Let the mushrooms, onions and garlic cook for 10 mins (whilst stirring)
5. Add the chopped tomatoes
6. Season with seasonings of your choice (mixed herbs/curry powder)
7. Let it simmer for 10/15mins on low heat
8. Stir in the chickpeas into the sauce slowly
9. Roughly chop the spinach and add (a lot of spinach is good as it will shrink considerably)
10. If you wish, you can also add more fresh herbs at this point
11. Keep the mix on low heat for another 10mins and then serve
